Spring Cleaning

 

Spring cleaning was more prevalent when central heat wasn't as common as it is today.  As the weather began to warm, most people would open their windows and air out the house to rid it of fireplace smoke.  Today, the warm weather still encourages many of us to declutter and clean our homes.  Of course, if you live in Texas...the weather may wreck havoc on some of those spring cleaning projects, because as we all know...the weather will change in 5 minutes.

The spring is also when the housing market becomes more active.  Utilizing the beginning of the warmer weather is a great time to declutter, organize and clean your home to prepare it for listing.

February Recipe of the Month

Spoil your Valentine with this decadent, flourless chocolate cake courtesy of delish.com

 

 

INGREDIENTS
FOR THE CAKE
Cooking spray, for pan
6 oz. bittersweet chocolate, roughly chopped
1/2 c. (1 stick) butter, cut into large chunks
1 tsp. instant espresso powder
1/4 c. hot water
1 c. sugar
large eggs
3/4 c. unsweetened cocoa powder (preferably dutch process)
FOR THE GANACHE
1/2 c. heavy cream
1 c. semisweet chocolate chips
Raspberries, for serving
DIRECTIONS

 

  1. Preheat oven to 350° and spray the inside of an 8” springform pan with cooking spray. Place a small saucepan filled halfway with water over medium heat and bring to a simmer. Place bittersweet chocolate and butter in a heatproof bowl and set over the simmering pot. Stir until chocolate and butter are completely melted. Turn off heat and remove bowl from saucepan. 
  2. Dissolve espresso powder in hot water. Add sugar and espresso to melted chocolate and whisk until completely combined then add eggs and whisk to combine. Stir in cocoa powder.  
  3. Pour batter into prepared pan and bake until just set in the middle and a thin crust forms, about 35 minutes.  
  4. Let cake cool for 15 minutes then remove sides of springform pan. Let cake cool completely. 
  5. Meanwhile make ganache: Place heavy cream in a small saucepan and bring to simmer. Place chocolate chips in a heatproof bowl then pour hot cream over chocolate chips. Let sit 30 seconds then whisk to combine. 
  6. Pour ganache over cake and smooth with an offset spatula. Place in refrigerator until set, 10 minutes. 
  7. Serve with raspberries.

Homestead Exemptions

 

If you bought a home in 2018 that serves as your primary residence, now is the time to complete your Homestead Exemption paperwork.  This process can be done online, so you do not need to pay an outside company to handle it for you.

You only have to file it once, as the exemption will remain with you as long as you live on the property.  

The window to submit this exemption is January 1st to April 30th.
